Premium Ingredients develops pizza cheese stabilizers

Spanish food ingredient company Premium Ingredients has introduced two stabilizers for analogue cheese for pizzas.

Premitex XLK-15043 is a stabilizer based on starches, hydrocolloids and melting salts. It makes it possible to produce mozzarella analogues in equipment not optimized for this task in terms of speed stirring and heating, as traditional spinners.

It is specifically designed for SMEs and companies in which investment in cookers or twin screw blenders with direct steam injection is not an option, which Premium Ingredients says is common for many cheesemakers.

Premium Ingredients says that Premitex XLK-15067 is ideal for making vegan cheese.

It consists of a blend of starch, hydrocolloids and fiber, allowing for a total replacement of casein.
