Coconuts are commonly associated with the exotic and tropical terrains of the Carribean. Recently however, a food technology group in the UK have developed a new baked coconut flavouring, which the company claims will guarantee 100 per cent authenticity, as well as versatility.
TasteTech has already successfully applied this new flavouring to a range of bakery products, deciding that this was a particularly suitable application.
Cakes, cookie and muffins, for example, provide ideal platforms for a boost of this new baked coconut flavour. The old-time classic, which has become a firm favourite amongst consumers for many years- authentic coconut ice-cream can also be re-introduced, to what the company believes, is an exceptionally high standard.
TasteTech believes that these findings were as a result of their controlled release technology, which involves the coconut being microencapsulated within an invisible microfilm of hardened vegetable oil. This creates a free-flowing powder that can easily be mixed with other bakery and snacks ingredients. The controlled processing ensures that the flavourings are only released when they are programmed to do so. It is available in liquid and spray dried forms.
"Our new baked coconut flavouring is providing many exciting, new opportunities for manufacturers to control the flavour and quality of their foods. It is especially suitable when adding to products with a good heat stability, as the flavouring can be controlled to release at a pre-determined temperature, such as 60°. Because the flavouring is highly concentrated, considerable cost savings can also be made" commented Roger Sinton, managing director of TasteTech.
