Cream of the crop

BakeMark International is making available a new complete range of cream alternatives aimed at the burgeoning bakery and food service industries. The company is confident that the products are of such quality that they could be used as standalone ingredients.

The new portfolio consists of sweetened and unsweetened options and, according to Andrew Adam, BakeMark International's marketing manager, using cream alternatives offers numerable benefits. Inconsistencies in taste and quality are eradicated and moisture migration is kept to a minimum. Additionally he said, cream alternatives exhibit better tolerance to processing and storage.

One of the re-occuring issues of using dairy creams in baked products is stability. This, the company claims, can be counteracted using Lactofil, a sweetened product which can produce more than three times the volume of a traditional cream in a short period of time, and is also moisture resistant.

Other applications include ice-creams, mousses, fillings and other desert products and are available in a variety of flavours.

BakeMark has produced a range of bespoke alternatives that would suit other food service industries and different culinary applications. Valesse, an unsweetened product is suited to savoury food such as spreads, pasta dishes and sauces. Addtionally the company offers a range of UHT liquid sauces including Champignon, Hollandaise, Bernaise and Au Poivre. Also in the range is Kåsecreme- suitable for quiches and savoury fillings.

"In selecting the most appropriate cream alternatives for a new range, we worked closely with both our customers and our operating companies within CSM Bakery Supplies Europe. The resulting range demonstrates our commitment to providing all the ingredients needed to create exciting and mouthwatering baked goods conveniently. Lactofil, Base Bianca, Ready to Use, Valesse and Kåsecreme are cost-effective and easier to store and handle, but just as delicious as traditional dairy creams," commented Adam on the portfolio.

BakeMark International only until recently exhibited their products to western Europe at IBA 2003 in October and showcased its brands like BIB-Ulmer Spatz, Arkady and Braims.The company represents the international sales and marketing interests of CSM Bakery Supplies Europe and CSM Bakery Supplies North America in Eastern Europe.
