Abby Middleton, marketing manager at Ornua Ingredients, told DairyReporter that the new product was developed after a customer approached the company to make a base to which they could easily add flavors.
“We have an NPD facility in Ledbury (UK) with our own kitchen; they developed the product,” Middleton said.
The product includes Ornua Ingredients’ own full-fat soft cheese, which Middleton says is clean label.
Middleton said that for labels, the ingredients in the mix include full-fat soft cheese, cream, sugar, water, lemon and cornflour.
“And depending on if the customer wants us to add in the flavors for them here, we're able to add in chocolate or a flavoring for them,” she noted.
“We did a lot of benchmarking tests against what was in the market, and against retail and restaurant products, because at the moment it's focused on manufacturers, but we will be going into foodservice with it.”
Product versatility
Middleton said that the product can be part of a baked cheesecake simply by adding egg.
“It also has the capability of being like an aerated dessert, almost like a mousse; it's also a product that can be whipped and deposited into pots,” she added.
“A lot of dessert mixes are very exact – a brownie mix or a cheesecake mix,” Middleton said.
“This product can be quite a few different things. That's the big difference, that it's versatile. It's a completely clean decoration.”
HPC technology
HPC Technology (high performance consistency), developed by Ornua, ensures product with a natural appearance, strong texture and consistency in all type of production settings.
“It takes away from inconsistency,” Middleton said.
Ornua’s mix is spreadable as well as heat and freeze-thaw stable. It is also suitable as the basis for mousses and ice cream based desserts.
Ornua’s dessert mix has a chilled shelf life of three months.
