One of the companies exhibiting at the event was Carpigiani.
Carpigiani initially produced machines for gourmet gelato in Italy, but as gelato became more globally known, the company expanded with overseas branches and a network of dealerships.
Since 1989, Carpigiani has been part of the Milan-based Ali Group, one of the world's largest manufacturers and suppliers of equipment for the foodservice industry. Today, Carpigiani is a global leader in the production of equipment for fresh ice cream, pastry and more. It has continued to consolidate its position as the leading manufacturer of equipment for soft serve, frozen yogurt, shakes, slush and whipped cream.
The company also operates a gelato museum in Italy, and several ‘universities’, covering pastry, frozen desserts and gelato. Naturally, it was Gelato University that caught the eye, and Dairy Reporter talked to the company’s development and training chef, Joe Yates.
